SONIA’S “CLASSIC” CHOCOLATE CHIP COOKIES (GF, DF, LOW SUGAR)

These are the closest thing to a classic, warm, gooey, chocolate chip cookie but they’re Sonia Series-approved! Gluten-free, dairy-free, and very low in sugar but you would never know! Enjoy and warning - these are known to disappear FAST.

Ingredients

  • 1 1/4 cup ground oats

  • 1/2 cup of water

  • 1 tablespoon peanut butter

  • 1 tablespoon Maple syrup

  • 1 egg 1 teaspoon salt

  • 40 to 50 drops monk fruit extract

  • 1/2 teaspoon cinnamon

  • 1/2 cup of chocolate chips (I use Lakanto or Lillys)

  • Optional: monk fruit powdered sugar

Recipe

Heat oven to 400/450 degrees depending how strong it is

  1. Ground oats until they are flour consistency, and mix in water.

  2. Then evenly mix in egg and peanut butter.

  3. Add maple syrup, salt, monk fruit, cinnamon and mix together.

  4. Lastly, add chocolate chips

  5. Line a baking sheet with parchment paper and spoon about 1-inch blobs onto the sheet, making sure they are not too close and not too tall (flatten a bit if you need to).

  6. Optional: sprinkle the tops with monk fruit sugar

  7. Cook for 8-10 minutes
